Chicken of the Woods

Chicken of the Woods season is almost upon us!

These vibrant Laetiporus mushroom species grow on hardwoods like oak and are prized for their rich texture and flavor, earning the nickname “the vegan chicken.” Some species, like Laetiporus conifericola, fruit on conifers like Douglas fir, western hemlock, Sitka spruce, and even cedars!

Foragers, take note! Proper identification is essential and always be mindful of the signs of bacterial growth as it can cause GI upset.

When we harvest, we’re in relationship with the forest. Take only what you need and leave the rest to continue its work in the ecosystem.
